A chilled, refreshing soup with bright Asian flavors, crisp vegetables, and silky noodles.
INGREDIENTS
Gazpacho—
- 2 cups lettuce, chopped
- 1 cucumber, chopped
- 1 cup snow peas
- 1/4 cup cilantro
- 1 small piece ginger
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Chili flakes, to taste
- 1/2 to 1 cup cold water (adjust consistency)
For serving—
- Cooked noodles (rice noodles or soba)
- Extra cilantro or chili flakes, optional
INSTRUCTIONS
Blend the gazpacho. Add lettuce, cucumber, snow peas, cilantro, ginger, rice vinegar, soy sauce, sesame oil, chili flakes, and cold water to a blender. Blend until smooth. Adjust seasoning to taste. Add more water if you prefer a lighter consistency.
Chill. Refrigerate for at least 30 minutes before serving.
Assemble. Place chilled noodles in bowls. Pour the gazpacho over the noodles. Top with extra cilantro, chili flakes, or a drizzle of sesame oil if desired.ed spice level.
